Our Chefs work closely with a team of trainers, dieticians, nutrionists and other experts, to bring you a quality product with your health in mind.
James Donato is a formally trained Chef who has a culinary arts degree as well as a food and beverage management degree. He has spent the last 7 years as the Executive Chef/ Director of Operations for the #1 rated aviation catering company in the country consecutively. He has serviced private jet owners varying from politicians Bill Clinton, Barak Obama, Dan Quail, Moroccan and Saudi Arabian Princes, Sean Puffy Combs, Celine Dion, Harrison Ford etc. As well as every professional sports team that has flown out of the South Florida area.
During his time there he operated on 7 million dollar sales annually and was responsible for 85 employees and 3 outlets of business. Silver Linings, SL West Palm Bch, and Jet Runway Café.
Prior to this he worked for the largest aviation caterer in the country "Air Chef", as well as the Air Culinaire which he assisted in building and training a staff in Nassau Bahamas. He orchestrated catering services for presidential inaugurations, as well as the Super Bowl and many other major events. He also successfully ran and operated several multi-million dollar operations.
Andrew Whiteman has spent the last eight years of his career as Executive Chef/Gm of the two most notable private aviation catering companies (Air Culinaire & Silver Lining In-flight Catering). During this time he has operated kitchens in three of the largest markets in the U.S., including Miami, West Palm Beach, and Washington D.C. with each of the operations earning in excess of 3 million dollars a year.
His responsibilities have included everything from menu planning, cooking, staffing, cost control, management of up to 50 employees, to sales. He has had the pleasure of servicing such clients as Barak Obama, John Kerry, Prince Bandar of Quitar, and numerous celebrities (Jay-Z, Brad Pitt, Tom Hanks, Bruce Springsteen, etc.).
Prior to this time he spent many years working several high end hotels and restaurants such as The Biltmore, Yesterday's and The Forge. Before that he worked as culinary instructor for Johnson & Wales at a school owned hotel in Bal Harbor after graduating with a degree from their culinary arts program.
Ku Castano has worked for such establishments as Woolley's Gourmet Market in Royal Palm Plaza in Boca as Executive Chef and Catering Director overseeing a multi-faceted operation with millions of dollars a year in gross sales.
He has also spent several years working for Unique Restaurant Concepts owned by Dennis Max. During this time he built and opened several well known restaurants including Max's Place, Prezzo's and Café Max.
Over the years Ku has earned opportunity through his culinary talents to work as a private chef for such people as Tommy Hilfiger, Steven Fender (owner of Physic Friends Network), and as Chef de Cuisine for Donald Trump and his family.
