Holiday Recipe: Raw Cheesecake

Blend in Vitamix or Blender:
2 cups Brazil nuts
1 cup coconut flakes powdered
2 cups water
1 cup Irish moss gel
½ cup coconut oil
¼ cup you sweetener choice to taste
Flavorings for your choice:
Add either vanilla, chopped fruits, cacao, maca, berries, peanut butter, etc…

In Food processor with S blade, combine:
1 cup walnuts or pecans
1 cup macs or almonds
1 cup coconut flakes
¼ cup coconut oil
¼ cup xylitol
½ t salt
½ t cinnamon
Save some to sprinkle on top
Press crust into pan and set in freezer .
Meanwhile mix the filling and flavorings of your choice. Now pour filling into crust, Sprinkle some reserved crust and freeze! Ready in a few hours. Defrost slightly and cut. Keeps 2 months in freezer.
