Lean Bean Peppermint Brownies

INGREDIENTS

 

  • 8 eggs
  • 2 t baking powder
  • 4 cup Ghirardelli semi sweet chips
  • 1/3 cup agave and/or maple syrup
  • Dash coconut extract
  • 4 cups rinsed and drained garbanzos

 

METHOD OF PREPARATION

Melt chocolate over hot water

While chocolate is melting, blend all ingredients in Vita Mix

Add melted chocolate and mix

Pour batter into bowl and add any fillings of choice: nuts, or ginger, cacao nibs, goji berries, etc.

Pour into baking pan warmed with coconut oil

Bake 20-30 minutes at 350 degrees. After cooling, garnish brownies with crushed peppermint candies. Serve with Chia Choco-Pudding as dip, or side ‘frosting’.

 

*BONUS* Chia Choco-Pudding Frosting

Prepare first (needs to sit ½ hour):

 

2 cups melted and cooled to room temp Ghirardelli semi sweet chips

Add and stir in:

½ cup coconut milk

 

Sprinkle and stir together with fork in another bowl/pitcher and let sit ½ hour:

1/2 cup chia seeds

1 cup coconut milk, or more according to viscosity, after soaking can add

Combine all after coming to room temp and spoon into cups.

 

If desired top with a sprinkle of ground cacao nibs and organic coconut.
